Ingredients

3 lbs chicken pieces
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, sliced
4 potatoes, diced
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
4 cups chicken broth
2 cups diced tomatoes

Instructions

Heat olive oil in a large pot over medium heat.

Brown chicken pieces on all sides, remove and set aside.

In the same pot, sauté onions and garlic until translucent.

Add carrots and potatoes, cooking until slightly tender.

Stir in cumin, paprika, salt, and pepper.

Return chicken to the pot, add chicken broth and tomatoes.

Bring to a boil, then reduce heat and simmer for 1 hour.
